Thus, all senses must be exercised, memory nourished, memories shared.
Polenta, as simple as it may be, can be a chef’s masterpiece. Sought-after “bramata” flour from the northern Italian planes, esoteric Mediterranean Sea salt harvested off the coast of Sicily, pure spring water from the Alps highest peaks.
Or, it could be a family portrait. The crackling wood-fired stove, the tangy scent of roasting orange peels. My mother panting in the heat, slowly stirring the pot; my defiant sister drawing faces on the frosted window condense.
Unperceivable memories, which I will forever cherish every time I have a simple slice of polenta.
In the end, being able to bring this much to your table, is what makes our day, here at Tigelleria Restaurant, worthwhile.
